The weather is still in a cooler side and definitely this recipe is a true keeper in an ever changing temperatures! This hearty soup is surely will satisfy everyone’s taste buds, its loaded with healthy veggies and meat for protein, an all in one meal that best paired with italian bread!

Ingredients:
1 lb italian ground sausage (hot or mild)
6 oz cooked bacon crumbled
1 medium onion , diced fine
1 medium garlic head, minced
4 medium potatoes, chopped to quarter pcs
1 bundle of fresh kale, chopped about 7 cups
6 cups chicken broth
1 cup heavy whipping cream or 1 can of coconut milk
salt and pepper to taste
Parmesan cheese (to serve, optional)
Instructions:
1. Cook the chopped bacon until browned then remove and placed in a plate lined w/ paper towel to drain excess fat
2. With 1 tbsp of oil left from the bacon, saute' the italian sausage breaking it up w/ the spatula, cook until brown then place it in a paper towel lined plate
3. Cook the onion and and minced garlic for 1 min
4. Add the chicken broth and water to boil, then add the potatoes and cook for 14 mins until tender
5. Then add the chopped kale into a boil
6. Lastly, stir the cream to a boil. Season to taste w/ salt and pepper
7. Serve in a bowl garnish with bacon and parmesan cheese to liking.
Use cauliflower instead of potatoes for Keto diet
Use coconut milk instead of heavy cream for healthier options
Storage:
The soup can be refrigerated for up to 4 days , re heat in a microwave or stove until hot
Not recommended freezing the soup, due to the cream tends to clump
